Strain before the drink meets the ice

Mash the berries with lemon, then add apple juice and press the mixture through the sieve into a stable jug. Do that work before filling the glasses, while you can still see and remove the seeds. The deep color comes from the fruit; changing it to match an image is not necessary for this recipe.

Divide the measured ice and strained base between both large glasses, then add each soda portion slowly. One gentle stir is enough to combine the layers before serving. Keep the sieve and berry bowl out of the pouring area so the jug can be lifted cleanly. This is a strained fruit fizz, not a whole-berry slush, so avoid blending ice into the base.
