Measure the prepared squash

The squash amount is the peeled, seeded weight. Prepare it before measuring and keep the cubes near the listed size so the covered simmer can soften them evenly. Test a cube with a spoon before blending: it should break apart easily, rather than merely have a soft surface around a firm center.

Take the pot off the heat for blending and use an immersion blender rated for hot liquids. Keep its head under the soup while it runs and stop it before lifting it out. Stir the cream through only after the soup has been blended smooth.

Coordinate the warm bean topping with the soup

The olive oil for the beans is separate from the oil used to start the soup. Mash the beans with their measured oil and lemon juice, leaving enough texture for a substantial spread. Warm that mixture in its own small saucepan while the blended soup is gently reheated.

Toast all eight slices near serving time and divide the topping across them. Two toasts accompany each of the four bowls. Keeping the bread alongside, rather than sitting in the soup, preserves the contrast between smooth squash and crisp toast.
