Dry the chickpeas and use both roasting sheets
Drain, rinse and dry the canned chickpeas before tossing them with the prepared sweet potato, oil and seasonings. The recipe uses two sheets to keep the food in one layer. Check that both oven shelves have room before beginning, with parchment rated for the stated oven temperature.
At the halfway turn, exchange the sheets between shelves as directed. Check both sheets for tender potato centers and lightly crisp chickpeas rather than assuming the second sheet matches the first. The chickpeas here begin cooked from cans; dry chickpeas are a different preparation task.
Keep a finishing share of the hot honey
Mix the honey, hot sauce and lime juice separately, then toss only half through the warm roasted mixture. Keep the rest for the final drizzle. Prepare the romaine and cucumber while the sheets roast so the bowls can be assembled when the hot ingredients are ready.
Divide the roasted mixture, greens and cucumber among four bowls before adding the yogurt and remaining sauce. This version uses chickpeas instead of beef, but it still contains honey and Greek yogurt. Its ingredient list should not be described as vegan. Follow the existing separate-storage instructions for any hot components and cold toppings left over.
