Prepare the faces away from raw beef
Cut the cheese teeth and arrange the lettuce, pickle slices and olive halves before shaping patties, using a clean preparation area. Keep the cheese trimmings for the hot patties as directed. Divide the beef into all eight thin portions before cooking, with each a little wider than its bun rather than making the first few much thicker.
Cook in batches and use the center-temperature check in the recipe rather than color or the short time alone. Assemble on clean plates with clean utensils after the raw-beef work is finished. Set the olive eyes in the bun slits without toothpicks. Serve promptly while the patties are hot, making the decorative details a short final step rather than a long interruption.
