Prepare a grease-free bowl and piping space

The measured egg whites and sugar belong to a clean, grease-free mixing setup. Add the sugar gradually and keep whisking to the glossy stiff stage described before piping. Have both lined trays ready so the mixture can become all twenty-four shapes without a pause to search for parchment or a piping bag.

Keep the shapes similar in height so the drying stage is comparable across the trays. Use the method’s dry-to-touch and paper-release cues before the oven-cooling stage. Chocolate faces belong on cooled ghosts; warm surfaces can blur them. Store the fully cooled meringues airtight in a dry place, and use a container tall enough to protect their peaks rather than pressing them flat.
