Prepare the potatoes and kale for the soup pot

The eight generous bowls begin with an eight-quart pot and the full listed stock-and-water quantity. Have that pot ready before cooking the bacon. Peel the russet potatoes and cut them into quarter-inch slices, rather than larger chunks that would change the simmering job.

Measure the kale as prepared leaves after removing the tough stems. Chop it before the potato simmer begins so it can enter with the cooked sausage at the later stage. Keep the cream, bacon topping and Parmesan ready separately; they have different places in the finish.

Keep the sausage stage separate from the potato simmer

Transfer the cooked bacon out of the pot, leaving the measured tablespoon of fat. The sausage and crushed fennel seed cook next. Follow the detailed thin-tip thermometer check for the sausage crumbles and its 160°F target before transferring that mixture to a bowl.

The onion and garlic then start the soup base in the same pot. Once the stock, water and potatoes are added, check that a potato slice is tender before the kale and cooked sausage return. Keep the stated order rather than asking the short final stage to finish firm potato centers.

Finish the cream gently and share the toppings

Stir in the cream and pepper at the final heating stage. Keep the soup steaming hot without a hard boil, as the method directs, and stir through the pot so the cream is distributed. The bacon and Parmesan remain toppings instead of spending the whole simmer in the broth.

Ladle beneath the surface when filling the eight bowls so potatoes, sausage and kale are shared with the liquid. Divide the bacon and Parmesan at the table. If the full batch is larger than you need, use the serving calculator for ingredient arithmetic and check pot capacity, cooking stages and the original temperature checks separately.
