Put a savory face on your Halloween table with jack-o’-lantern quesadillas, olive-spider pizza bagels and rice-and-bean stuffed peppers. These three complete Fondfolk recipes offer different portions and preparation times: choose one as your main project or plan separate warm serving rounds.

Choose your dinner project

The quesadillas make two filled tortillas in about 20 minutes. The pizza recipe makes eight bagel-half mini pizzas in about 25 minutes. The stuffed peppers make four larger filled peppers in about an hour. Those are recipe yields, not a combined promise about how many guests the collection feeds.

1. Jack-o’-Lantern Quesadillas

2 quesadillas · estimated 20 minutes

Ingredients

  • 4 small flour tortillas (about 15 cm / 6 inches)
  • 1 cup (100 g) shredded cheddar cheese
  • 2 tsp olive oil

Method

  1. Use kitchen scissors to cut two triangle eyes and a small mouth from two tortillas. Leave the other two whole.
  2. Heat the oven to 200°C / 400°F. Line a baking tray with parchment. Put the whole tortillas on the tray and divide the cheese evenly between them, leaving a narrow border.
  3. Place the face tortillas on top. Brush their tops with the olive oil. Bake for 8–10 minutes, until the edges are crisp and the cheese has melted.
  4. Let stand for 2 minutes, then serve warm. Check early if your tortillas are very thin.

Cut only the upper tortillas

Four small tortillas make two quesadillas because each needs a whole base and one face-cut top. Keep the openings small enough that the top still lifts as one piece. The cheese is the orange color behind the face; olives, sauce and other decorations are not part of this formula.

The source method uses kitchen scissors for the eyes and mouths. Compare kitchen shears if you need a suitable pair, checking the chosen item’s instructions and cleaning requirements. Browse results contain different products; the link does not endorse every listing.

Divide the measured cheese between both bases before adding the face tops. Brush only the measured oil over the tops, then check early if your tortillas are thin. The two-minute rest is part of the method, rather than a reason to leave the tray in the oven longer.

2. Spider Pizza Bagels

8 mini pizzas · estimated 25 minutes

Ingredients

  • 4 mini bagels, split
  • ½ cup pizza sauce
  • 1 cup (100 g) grated mozzarella
  • 12 large pitted black olives

Method

  1. Heat the oven to 200°C / 400°F. Place bagel halves cut-side up on a baking tray and toast for 3 minutes.
  2. Spread each half with 1 tablespoon pizza sauce and divide the mozzarella evenly on top. Bake for 7–9 minutes until the cheese has melted.
  3. Halve four olives lengthwise for eight spider bodies. Halve the remaining olives and cut each half into four curved strips for 64 legs.
  4. Let the pizzas stand for 2 minutes, then place one olive body and eight legs on each. Serve warm.

Count the spider pieces before assembly

Four mini bagels become eight pizzas after splitting. Four olives cut lengthwise make eight bodies. The other eight olives become sixteen halves; four strips from each half make sixty-four legs. Give each pizza one body and eight legs, four on either side.

The bagel halves first toast without sauce for three minutes. They then receive sauce and mozzarella for a separate seven-to-nine-minute bake. Add the olive spiders after the two-minute rest, following the source order so the olive pieces stay clearly arranged.

A baking sheet supports the bagel halves and can also hold the quesadillas in their separate round. Check the chosen sheet fits your oven; this registered large sheet has a 20-inch overall length including handles. Do not assume both full recipes fit on one tray without crowding.

3. Jack-o’-Lantern Stuffed Peppers

4 stuffed peppers · estimated 60 minutes

Ingredients

  • 4 large orange bell peppers
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 1 tsp ground cumin
  • ½ tsp smoked paprika
  • ½ tsp fine salt
  • 1 cup cooked rice
  • 1 can (400 g) black beans, drained and rinsed
  • ½ cup tomato salsa
  • 1 cup (100 g) shredded cheddar cheese
  • ¼ cup (60 ml) water

Method

  1. Heat the oven to 190°C / 375°F. Slice the tops off the peppers and remove seeds and white ribs. Carefully cut small jack-o’-lantern faces into one side of each pepper. Put the peppers upright in a baking dish and bake empty for 10 minutes.
  2. Meanwhile heat the oil in a frying pan over medium heat. Cook the onion for 5–6 minutes until softened. Stir in cumin, paprika and salt, then add rice, beans and salsa. Cook for 3 minutes, stirring, until hot.
  3. Spoon the filling into the peppers and top with cheddar. Add the water to the bottom of the baking dish, cover loosely with foil and bake for 20 minutes.
  4. Remove the foil and bake for 10 minutes more, until the peppers are tender and the cheese has melted. Rest 5 minutes before serving.

Start with cooked rice and upright peppers

The one-hour estimate assumes the rice is already cooked and the canned beans are drained and rinsed. It does not include cooking a new batch of rice from dry. Choose peppers that sit upright and cut modest face openings so their walls continue to hold the filling.

Use a baking dish that holds four peppers upright with room for the filling and a loose foil cover. A rectangle baking pan is one registered option to compare with your own dish; check inside depth, fit and headroom before choosing. A shallow sheet is not a substitute for the dish that contains the measured water. Follow the pan’s care instructions; do not use it on the stovetop or under a broiler.

Bake the empty pepper shells for ten minutes while preparing the hot filling in the frying pan. A cookware-compatible spatula can stir the onion, seasonings, cooked rice, beans and salsa. Check the tool’s heat limits rather than leaving it in the pan or oven.

The quarter cup of water goes into the bottom of the baking dish, not the rice mixture. Keep the twenty-minute covered stage and the ten-minute uncovered stage separate. Check that the peppers are tender and keep the five-minute rest before moving them.

Plan separate oven rounds

The pepper recipe uses 375°F (190°C); the quesadillas and bagel pizzas use 400°F (200°C). Keep those temperatures distinct. If preparing more than one recipe, plan your oven and tray space before starting rather than giving every dish the same temperature or promising that all three finish together.

Prepare the tortilla faces, olive pieces and pepper faces as separate jobs. Keep the cheddar for the quesadillas and peppers distinct from the mozzarella for the bagels, and measure each recipe on its own. The mini pizzas use pizza sauce; the pepper filling uses tomato salsa. Those details matter even when two bowls look similar.

Serve the quesadillas and mini pizzas warm after their stated two-minute rests. Let the stuffed peppers rest for five minutes. Start with one recipe if you want a simpler evening; the collection is a choice of three complete recipes, not a requirement to make a whole buffet.
