1. Jack-o’-Lantern Hummus Pepper Cups

Makes 8 half-pepper portions • estimated 20 minutes • no cooking.

Ingredients

  • 4 small orange bell peppers
  • 1 cup (240 ml) prepared hummus
  • 2 tbsp olive oil
  • 1 tsp lemon juice
  • 1/4 tsp paprika, for garnish
  • 1 tbsp finely chopped parsley, for garnish

Method

  1. Rinse the peppers under running water and dry them. Cut each lengthwise into two halves, keeping a little stem on a half if convenient. Remove the seeds and white ribs. Set the eight halves cut-side up on a platter.
  2. Rest each half securely on a cutting board. With a small sharp knife, carefully carve tiny triangular eyes and a small mouth through its outer wall. Keep the cuts small so the hummus is less likely to squeeze through; carving is an adult preparation job.
  3. Stir the lemon juice into the hummus. Divide the mixture among the eight pepper halves, using roughly 2 tablespoons per half and distributing any remainder evenly.
  4. Drizzle the measured olive oil across all eight portions. Sprinkle with the paprika and chopped parsley. Cover and refrigerate until serving.

Eight halves, rather than eight whole pumpkins

Four peppers produce eight halves. To make the whole upright pepper cups suggested by the illustration, use eight suitably small peppers instead; the same filling will sit lower inside them. The half-pepper version is the measured recipe here and is easier to portion. Choose thick hummus and keep the carved openings modest. A wide smile cut through the side of a pepper will not act as a sealed bowl.

2. Black Cat Cracker Bites

Makes 12 crackers • estimated 25 minutes • assemble close to serving.

Ingredients

  • 12 sturdy round crackers
  • 1/2 cup (about 115 g) softened plain cream cheese
  • 12 large pitted black olives, divided for heads, ears and pupils
  • 24 small mozzarella pieces, cut into flat little eye disks
  • 1/2 orange bell pepper, cut into 12 tiny nose triangles; save the rest for another use
  • 12 long chive stems, cut into 72 short lengths for whiskers

Method

  1. Pat the olives and mozzarella dry. Halve 6 olives lengthwise to make 12 rounded heads. Cut 3 more olives into 24 small ear triangles and the remaining 3 into 24 tiny pupil pieces. Keep the head pieces separate from the smaller decorations.
  2. Spread about 2 teaspoons of cream cheese over each cracker. Reserve a little of the measured cheese on your spreading utensil as glue for the faces.
  3. Set one olive half cut-side down on each cracker. Press two olive ear triangles into the cream cheese just behind it. Add two mozzarella eye disks to the rounded front with tiny dabs of cream cheese, then attach a small olive pupil to each disk.
  4. Add one orange-pepper nose and six short chive whiskers to each cat, three on each side. Use tiny dabs of cream cheese where necessary. Arrange in a single layer and serve promptly, or refrigerate briefly until the table is ready.

Dry pieces help the little faces stay put

The twelve olives do several jobs; they are not twelve whole heads plus an extra unmeasured supply for ears. Cut the decorations before spreading the crackers so you can see that every cat has two ears and two pupils. Keep the mozzarella disks small enough to fit side by side on the olive half. Moist olives can slide, while oversized cheese eyes can pull the face forward.

For advance preparation, cut the vegetables and eye pieces and refrigerate them separately. Spread and decorate the crackers near serving time to limit softening. Keep the remaining cream cheese and assembled perishable bites refrigerated, rather than leaving a decorating tray out throughout the party.

3. Bat-Wing Tortilla Chips

Makes about 16 bat chips, depending on cutter size • estimated 20 minutes, including baking and cooling.

Ingredients

  • 4 small flour tortillas, about 6 inches (15 cm) across
  • 2 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp fine salt
  • 1 cup (240 ml) prepared salsa verde, for serving

Method

  1. Heat the oven to 375°F / 190°C. Line a large baking sheet with parchment. Use a small bat-shaped cutter, roughly 2–2 1/2 inches (5–6 cm) across, to cut about four bats from each tortilla. A larger cutter gives fewer chips.
  2. Arrange the bats in a single layer. Mix the garlic powder, smoked paprika and salt. Lightly brush both sides with the measured olive oil and sprinkle with the seasoning. You can brush and season the offcuts too; bake them as extra chips rather than counting them as bats.
  3. Bake for 8–10 minutes, checking from 6 minutes because thin wing tips brown quickly. Rotate the tray if one side is coloring faster. Remove when the centers are dry and the edges lightly golden; let cool for 2 minutes to crisp.
  4. Serve with the salsa verde in a separate bowl. Keep the dip refrigerated until serving. Let any chips cool completely before putting them in an airtight container.

Match the cutter to the tortilla

Lay the cutter on a tortilla before cutting the full batch. Four small bats per tortilla is a portion-planning estimate, not a guarantee for every cutter shape. Avoid stacking the chips on the baking sheet: overlapping wings do not dry as evenly. Keep an eye on the thinnest tips and lift finished chips off the hot tray if other pieces need longer.

Set out crisp and chilled snacks separately

Bake the tortilla bats first and let them cool while you prepare the peppers and cat decorations. Refrigerate the hummus peppers and cut face pieces. Assemble the crackers close to serving, then bring out a small platter at a time. Keep chips away from damp garnishes and put salsa in its own bowl.

These batches make different portions: eight pepper halves, twelve crackers and about sixteen chips. That is not a guaranteed guest count or three complete meals. Choose quantities for the rest of your menu, and double each ingredient within a recipe if you need a second batch.

Serving and food-safety notes

Keep hummus, cream cheese, mozzarella, prepared salsa and cut vegetables refrigerated until serving. Maintain the refrigerator at 40°F / 4°C or below. Discard perishable snacks left without temperature control for more than two hours, or one hour when the surroundings are above 90°F / 32°C. Refill small platters from chilled portions.

Wash produce under plain running water before cutting and dry it with a clean towel. Use clean hands, boards and utensils. Check ingredient packages for wheat, milk, sesame and other allergens; hummus and crackers vary by brand. Do not assume a substitute is suitable for a guest without checking its actual label.

CDC: preventing food poisoning — refrigeration and serving limits.
