Finish one web while its base is soft

Melt the two chocolates separately and have both ready before starting the first rice cake. Divide the dark coating across the six in planned portions, working on one at a time. Pipe the white spiral while that dark surface is still soft, rather than coating every rice cake first and discovering the first ones have set.

Draw the clean toothpick outward from the center and wipe between strokes. Remove it from the work area once the web is finished. Chill the rice cakes flat until set, then protect them in an airtight container. The same-day advice concerns their crisp texture; keeping them in a damp refrigerator environment or piling soft coatings together can change the intended bite.
