Pair the cookies before scooping
Match similar-sized cookies into six pairs and place the bottom ones flat-side up. Keep the freezer-safe tray ready before the ice cream is slightly softened for assembly. Measure one quarter cup per sandwich so the final pair is not left with a much smaller filling, then press gently instead of squeezing until the cookies crack.
Add the sprinkle edge and eyes while the ice cream can hold them, then freeze for the full firming stage. Serve directly from frozen storage. If wrapping for later, wait until the sandwiches are firm so the wrapping does not flatten their faces or force filling out. Keep the original cookie and ice-cream labels available for ingredient and storage questions.
