1. Pesto Monsters

6 mini pitas • est. 20 min • 2 shown

Ingredients

  • 6 mini pitas (about 10 cm / 4 in)
  • 6 tbsp basil pesto
  • 90 g grated mozzarella
  • 3 black olives, sliced into 12 rings

Method

Heat oven to 400°F / 200°C. Spread 1 tbsp pesto on each pita; divide mozzarella over all 6. Bake on a lined tray 8–10 min until hot and cheese melts. Rest 2 min. Add 2 olive-ring eyes each.

2. Mozzarella Ghosts

6 mini pitas • est. 20 min • 2 shown

Ingredients

  • 6 mini pitas
  • 6 tbsp thick marinara
  • 120 g low-moisture sliced mozzarella
  • 3 pitted black olives

Method

Heat oven to 400°F / 200°C. Spread 1 tbsp sauce on each pita. Cut cheese into 6 simple ghosts; lay 1 on each. Bake 8–10 min until hot and cheese melts. Rest 2 min. Cut 12 tiny olive eyes; add 2 per ghost.

3. Black-Bean Pumpkins

6 mini pitas • est. 25 min • 2 shown

Ingredients

  • 6 mini pitas
  • 150 g drained canned black beans
  • 1 tbsp water
  • 1/4 tsp ground cumin
  • 90 g sliced orange cheddar
  • 6 black olives
  • 6 small green bell-pepper stem pieces

Method

Mash beans with water and cumin. Spread over 6 pitas. Cut cheddar into 6 circles; add 1 each. Bake at 400°F / 200°C for 8–10 min until hot and melted. Rest 2 min. Cut olives into 12 eye triangles and 6 mouths; add faces and pepper stems.

Choose the bases and cut simple faces

All three recipes use ready-baked mini pitas about 10 cm / 4 inches across. Do not substitute raw dough and assume it will cook in the same time. Larger naan or flatbreads need different topping amounts and may take longer to heat. Check the packaging for any specific heating directions.

For the pesto monsters, choose olives large enough to give four usable rings each. The batch needs twelve rings for six pairs of eyes. The ghost faces need only tiny olive pieces, so reserve the offcuts after making the twelve eyes. The pumpkin faces need twelve small triangles and six short mouths; cut these from the six olives rather than adding whole olives.

The ghost cheese can be cut with a small food cutter or a clean knife on a board. Keep the shape broad, with a rounded top and a simple wavy base; narrow details melt quickly. Save edible cheese offcuts for another meal. Orange cheddar makes the pumpkin silhouette, while a small piece of green pepper supplies its stem. The stems are edible garnish, not handles.

Keep the toppings thick and the tray uncrowded

Use thick marinara and drained canned beans. Mash the beans with the measured tablespoon of water and cumin until spreadable; this small amount should not become a pourable sauce. Spread the bean layer evenly so it heats through beneath the cheese. The canned beans are already cooked.

Divide the toppings across all six pitas before adding the final decorations. Each pesto pita gets one tablespoon pesto and 15 g mozzarella; each ghost gets one tablespoon marinara and a cheese shape cut from the measured 120 g. The pumpkin batch uses 25 g drained beans and 15 g cheddar per pita.

Arrange the bases in one layer on a lined metal baking sheet with space around them. Use parchment suitable for 400°F / 200°C. If your oven needs two trays, rotate and swap them as needed, checking near the end. The 8–10-minute estimate is a starting point: the filling should be hot and the cheese melted. Do not use dark edges alone as proof the center is ready.

Add the olive faces after the short rest so they stay distinct. Serve warm. If a cheese ghost loses some of its outline, use the olive eyes to restore the character rather than repeatedly baking it until the bread becomes hard.

Plan the party batch and serving

Making all three gives eighteen small flatbreads. That is a piece count, not a fixed number of guests; consider the other food on the table. Allow extra time for cutting faces and cooking in multiple batches. You can measure cheese, cut the olive pieces and mash the beans earlier on the serving day, then keep them covered in the refrigerator until assembly.

These recipes contain milk and usually wheat. Basil pesto can also contain nuts, so read its actual label before serving guests. Keep each topping and its utensil separate when handling an allergy request; a recipe name does not establish an allergy-free result.

Keep refrigerated ingredients at 40°F / 4°C or below. Refrigerate perishable leftovers within two hours, or one hour when the surrounding temperature exceeds 90°F / 32°C. Set out small trays rather than leaving every batch out throughout a long party.
