These three Halloween spritzes offer a pink raspberry-lychee drink, a golden pear-and-ginger drink and a red cranberry-lime drink. Each written recipe makes two glasses. The raspberry version needs blending and straining; the other two are stirred together. Keep the sparkling ingredient chilled and add it at the end.

Choose your recipe and set up

Choose glasses with at least 350 ml capacity, as all three recipes specify, and leave room for the ice and a gentle stir. Put Halloween decals on the outside below the rim, away from the drinking edge and contents. They decorate the glass without changing the recipe. Check that the ginger beer for the pear version is labeled alcohol-free.

1. Raspberry Lychee Cauldron Spritz

2 drinks · 10 minutes

Ingredients

  • 1/2 cup fresh raspberries
  • 1/2 cup drained canned lychees
  • 1/2 cup (120 ml) syrup from the lychee can
  • 1 tbsp fresh lime juice
  • 1 cup (240 ml) club soda, chilled
  • 1 cup ice cubes

Method

  1. Blend the raspberries, drained lychees, lychee syrup and lime juice until smooth. Press through a fine sieve into a small jug to remove the raspberry seeds.
  2. Divide the ice and strained fruit mixture between two glasses of at least 350 ml capacity. Slowly add half the club soda to each.
  3. Stir gently once and serve immediately.

Measure the drained lychees and the syrup from the can separately. Blend those with the raspberries and lime, then press through a fine sieve before adding soda. This removes the seeds without stirring the bubbles out of the finished drink.

Plan the serving order

Choose raspberry-lychee when you have time to blend and strain, pear-ginger when you want a softer fruit flavor with ginger, or cranberry-lime for a tart citrus finish. Keep the bases separate if offering more than one, and measure each recipe independently. Add soda or ginger beer to the glasses just before serving; a single gentle stir is enough.
