Let the coating make a small skirt

Set the lined tray near the dipping bowl before coating. Support each donut hole with a fork, let excess drip off, then place it on parchment. A little coating spreading at the base supplies the skirt; a large puddle makes the finished sweet harder to lift without breaking that edge.

Let the white layer firm before piping the dark face. Use a tiny opening and keep the features simple so they stay separate on the rounded surface. Chill for the final set, then move by supporting the base rather than gripping the face. Follow the actual donut and coating products’ storage directions when keeping any unserved pieces, and retain their ingredients for a local handoff.
